Toasted Pumpkin & Sunflower Seeds with Himalayan Salt the Perfect Surfer Snack...

Every surf needs a nutritionally packed snack in their kit.  These super delicious and easy to make pumpkin and sunflower seed nibbles are packed with nutrients.  Containing high-density lipids (HDL) omega 3 fatty acids, high in zinc which is vital to create optimum digestion, is vital for skin health and healing plus immunity, which is vital if you surf reef breaks and the damage on your skin that a reef cut can do.

Pumpkin and sunflower seeds are a good source of vitamin E.  Vitamin E is a fat-soluble vitamin that helps with the function of cell signalling so essential for optimum communication between cells and a natural antioxidant so perfect for radiate skin. 

Seeds are susceptible to going rancid due to their beneficial fat content so sourcing them from a busy shop or supermarket is essential as a high turn over of the product means a fresh product.  Storing them in an airtight container away from direct sunlight in a cool area is best.  Consume them within 3 weeks so they are nice and fresh. 

I make them when I am making dinner so the oven is already on.  Great for sprinkling on salads or vegetables. Place into kids lunch boxes and of course into your surf kit for a nutritious delicious snack after your surf.



Toasted Pumpkin and Sunflower Seeds with Himalayan Salt

Pre-heat oven to 150 degrees Celsius

3 cups of a mixture of pumpkin and sunflower seeds

1 tablespoon of cold-pressed extra virgin olive oil

2 teaspoons of Himalayan Salt or to taste

(Mrs Rogers Natural Seasalt has iodine in it great for thyroid health)

Another variation is to use 2 - 3 teaspoons of Teriyaki Sauce gluten-free instead of the sea salt.

Place seeds, oil and salt in a bowl. Stir to coat all the seeds with oil and salt.

Scatter onto a baking tray place in the oven for 10 minutes keeping an eye on them at all times. Bake until toasted.
